La Ginestra farm has about 2 hectares of olive groves and all the work in the field, from pruning to harvesting, is completely carried out by hand following the principles of organic farming. It is a multivarietal cultivation: the varieties of olive trees are mainly leccino, muraiolo and frantoiano.
The harvest is generally done in early November when the olives are still tending to green; the olives are transported as soon as they are harvested to the nearby trusted oil mill to keep their freshness intact and the oil is then cold pressed, thus allowing to maintain the organoleptic characteristics of the extra virgin olive oil, preserving all the properties of the olives, the quantity of minerals, the vitamins and antioxidants for the body
The result is a light body extravergin olive oil but with a marked acidity and a pungent flavor and aroma.
Excellent in combination with grilled meats and vegetables, suitable in the kitchen as a dressing for salads, vegetable and legume soups.
